White Fang Chili

White Fang Chili
Ingredients:
  • 2 1 pound bags great northern beans
  • 3 pounds boneless chicken breast
  • 3 medium onions, chopped
  • 3 4-ounce cans of chopped green chilies
  • 1 4-ounce can chopped/sliced jalapenos
  • 1 heaping Tbs minced garlic
  • 2 tablespoons olive oil
  • 6 cups chicken stock (or canned broth)
  • 1 teaspoon dried oregano
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon ground cloves
  • Salt and Pepper to Taste
  • 2 cups shredded cheddar cheese
  • 1 red bell pepper, diced
Directions:
  • In a large pot, soak beans in cold water overnight.
  • Drain beans and set aside.
  • Simmer chicken in broth in the large pot for 15 minutes
  • Remove chicken, and add the beans and chiles to the broth
  • Let chicken cool, the dice and/or shred it. Toss it into the pot
  • In the meantime, sautee the onions in the oil until tender.
  • Add onions and spices to the pot, and simmer for at least 3 hours
  • Add broth as needed
  • Add the red pepper, cheese and simmer for another hour
