Vegetarian Chili Recipe
Ingredients:
  • 1 tsp. olive oil
  • 1-1/2 cups chopped onion
  • 1-1/2 cups chopped green bell pepper
  • 1 cup chopped celery
  • 2 (16-oz.) cans pinto beans, un-drained
  • 2 (14-1/2-oz.) cans Diced Tomatoes
  • 1 (6-oz.) can Hunt's Tomato Paste
  • 1 cup water
  • 1 cup chopped fresh mushrooms
  • 1 jalapeno pepper, seeded and chopped
  • 1 tbsp. chili powder
  • 1-1/2 tsp. ground cumin
  • 1 tsp. dried oregano, crushed
  • 1/2 tsp. pepper
  • 1 (20-oz.) pkg. tofu, drained, cut into small cubes
  • Hot sauce to taste
Directions:
  • Coat a Dutch oven with cooking spray; add oil and place over medium heat until hot. Add onion, green pepper and celery; sauté for five minutes, or until onion is tender.
  • Add beans and remaining ingredients, except tofu.
  • Bring to a boil. Cover; reduce heat and simmer 30 minutes.
  • Add tofu; stir gently. Cover and simmer 10 additional minutes.
