Microwave Barbecue Sauce

Microwave Barbecue Sauce
Ingredients:
  • 4 tablespoons unsalted butter
  • 1 medium onion -- chopped
  • 1 clove garlic -- minced
  • 1/2 cup diced celery
  • 1 cup water
  • 1 cup catsup
  • 1 diced red pepper
  • 1/4 cup fresh lime juice
  • 2 tablespoons cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 slice lime cut in half
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1/4 cup chopped fresh coriander
  • salt to taste
  • Hot sauce to taste
 Directions:
  • Microwave butter, onion and garlic in a medium microwave safe bowl, covered with plastic wrap, on high power for 2 minutes. Stir in celery and microwave covered for 2 minutes. Stir in remaining ingredients except coriander until blended. Microwave covered for 7 minutes, stirring halfway through cooking. Puree sauce in a blender bowl or food processor. Transfer to bowl and stir in all but 1 tb coriander. Garnish with remaining coriander. Serve warm or at room temperature. Makes 2-1/2 cups.
