Mexican Fiesta Soup
Ingredients: 3 cans of Chicken Broth 2 cups cooked, cubed chicken 1 cup salsa (your choice) 1 cup cubed potatoes 1 cup chopped carrots 1 cup chopped onion 1 cup chopped celery 1 can whole kernel corn 1 can vegtable or tomato juice (12 ounces) 1/2 cup vermouth cooking wine 1/4 cup chopped fresh cilantro Shredded Monterey Jack Cheese Tortilla Chips	Directions: In a large sauce pan, combine chicken broth, chicken, potatoes, carrots, onion, celery, corn, vegtable juice, salsa, cooking wine, green chiles and cilantro. Place over medium-high heat and bring to a boil. Reduce heat and simmer for 20-30 minutes or until vegatables are tender. Serve with cheese and tortilla chips.
