Ham and Egg Enchiladas

Ham and Egg Enchiladas
Ingredients:
  • 2 Tablespoons butter
  • 1 small red bell pepper, chopped
  • 3 green onions with tops, sliced
  • 1/2 cup Ham, diced
  • 8 Eggs
  • 2 cups Pepper-Jack cheese
  • 1 can Enchilada sauce (10-ounce)
  • 1/2 cup salsa
  • 8 (7 or 8-inch) flour tortillas
  • Fresh Cilantro for garnish
Directions:
  • Heat oven to 350 degrees. Melt butter in large skillet over medium heat and add bell pepper and onions. Cook about 2 minutes and then add ham, cook 1 addtional minute.
  • Lightly beat eggs in a meduim bowl and then add to the skillet. Cook till the eggs are set but still soft whil stirring occasionally.
  • Spoon about 1/3 cup egg mixture evenly down the center of each tortillla, top with about a tablespoon of cheese and roll tortillas up.
  • Place seam side down in shallow baking dish. Combine the enchilada sauce and the salsa and pour over the Enchiladas. Cover the dish with foil.
  • Bake for 20 minutes. Uncover and sprinkle with remaining cheese. Continue baking for 10 minutes or until cheese is melted. Garnish with Cilantro and serve.
