Great Chicken Fajitas Recipe
Ingredients:
  • 2 to 3 tablespoons olive oil
  • 1 small onion, cut into thin rings and separated
  • 3 to 4 cloves of garlic, very thinly sliced
  • 1 red ripe bell pepper, seeded and sliced into thin julienne
  • 4 boneless chicken breasts, skinned and cut into thin strips
  • 1 teaspoon paprika
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon dry chili flakes or to taste
  • 1/4 teaspoon dried oregano, crumbled
  • 1/2 cup chicken broth stock or bouillon
  • ˝ cup chopped fresh cilantro
  • juice of 1 fresh lime
  • 1 tomato, chopped
  • 1 avocado, peeled, chopped
  • salt and fresh coarse ground black pepper
  • fresh warm tortillas
  • salsa of choice (I use LaPaloma salsa)
Directions:
  • Heat the oil in a heavy skillet and gently sauté the onion, garlic and pepper until soft but not dead. Add the chicken breast and continue to sauté until the chicken is almost as done as you want it. Then add the next five ingredients and continue to sauté for another minute or two. Remove from the heat, add the cilantro, lime, tomato and avocado, toss gently and season to taste with salt and pepper. Put on a serving platter and garnish with slices of avocado, tomato and sprigs of fresh cilantro. Accompany with fresh, soft warm tortillas and salsa of choice. Each person uses the tortillas to scoop up some of the chicken mixture.
