			<content:encoded><![CDATA[<p><img class="alignleft" src="http://www.insanechicken.com/images/P/357-Ghost-Pepper-Hot-Sauce.jpg" alt="" width="115" height="180" />It’s hard to ignore a bottle of hot sauce with an intense hologram on its label.  It’s even harder to over look it once your read the text (text that is set over silver, reflective skulls I might add) on the side of the bottle and its sweet nothings become imprinted in your brain: “Ever seen a ghost?  One taste of <a href="http://www.insanechicken.com/357-ghost-pepper-hot-sauce.html" target="_blank">Mad Dog 357 Ghost Pepper Hot Sauce</a> and you will – your own!”  This ghost pepper edition boasts a full, hearty flavor that tastes of pine and has a sweet smell that doesn’t overpower your dining experience.  After tentatively dousing a baked sweet potato in the thick, syrupy sauce, my first coated bite revealed a serving of heat that was both immediate and all encompassing in flavor.  The sweet taste filled my mouth, and my dinner date deemed the sauce simply “physically hot” in its nature.  <span id="more-2911"></span>The sauce itself is an opaque liquid that pours smoothly and would make a solid addition to any secret family chili recipe or mixed into the meat filling for a batch of Sloppy Joes.</p>
<p>Bottom line: <a href="http://www.insanechicken.com/357-ghost-pepper-hot-sauce.html" target="_blank">Mad Dog 357 Ghost Pepper Hot Sauce</a> brings something to the table besides just spice.  While I didn’t find this Mad Dog creation all that scary, you can bet that I’d be willing to come back from beyond the grave and haunt my own mother to satisfy my 357 fix.</p>

<p>The Heine Hurtin&#8217; Sweet n Hot Sauce is also known as Heine Hurtin&#8217; Jelly or Heine Hurtin&#8217; Hot Sauce, but whatever you call it, it comes in an 8oz jar that is simple to use.  It really is a Jelly that is made for meat so the name is a misnomer.  The taste is sweet with a mild Jalapeno heat. <span id="more-2905"></span></p>
<p>A perfect way to use this sauce is to try it with mixed in with some softened cream cheese as an appetizing cheese ball or softened up as a cracker spread. You can also grab a cream cheese brick and pour the sauce over it and serve with crackers.  Sounds like a delicious appetizer that will be gone in a minute.  You can also use it as a dipping sauce for any meats and you can serve it on the side with chicken, pork, lamb or add it in with eggs for breakfast.  If you are BBQing, then throw some on just before taking the meat off of the grill.</p>
<p>Heine Hurtin&#8217; Sweet n Hot Sauce is made from the perfect blend of sugar, Jalapeno peppers and apple cider vinegar. It is a very unique recipe that was originally created by Carin Froehlich of Ingleby Farms in rural Bucks County, PA., but the recipe and name was sold to Chip Hearns back in 2002.   It has received numerous awards and mentions over the years.</p>

			<content:encoded><![CDATA[<p><img class="alignleft" src="http://www.insanechicken.com/images/P/Mad-Dog-Ghost-Ultra-Hot.jpg" alt="" width="115" height="180" />As someone who religiously tops pizza with hot sauce and in turn dips the crust in barbeque sauce, <a href="http://www.insanechicken.com/mad-dog-ghost-ultra-hot-bbq-sauce.html" target="_blank">Mad Dog’s Ghost BBQ Sauce</a> and its promise to serve up an “intense BBQ experience” immediately intrigued me.  I’ve had a few run-ins with Mad Dog’s Original BBQ Sauce in my day, but I’ve also found myself toeing the line with the ghost pepper (or Bhut Jolokia) as of late, a pepper that has a history of providing a hefty dose of spice and has caused my eyes to tear up on more than one occasion.   Feelings about the ghost pep aside, Mad Dog has had my number for years, and it didn’t take a huge leap of faith for me to pour a generous amount of this new sauce on to my plate.  And “pour” is the optimal word here – after a good shake, the sauce flowed out from the bottle’s wide mouth with ease and pooled into a puddle next to my pizza.  There was nothing watery in the least about this sauce.  <span id="more-2902"></span></p>
<p>Upon dipping my first slice of pizza (chicken sausage with caramelized onions, ricotta and red sauce spread over a thing crust), I became an immediate convert from the Original version to the newer, spicier member of the Mad Dog BBQ family.  The thick, rich sauce boasts a unique, smoky flavor with hints of garlic and tomato that is complimented by the heat of the pepper, rather than overpowered by the spice.  While I chose to douse my pizza in it, the sauce would make a dynamite burger on a hot summer night, or the perfect chicken marinade.  Plus, the label boasts all natural ingredients – so really, everybody wins (unless you hate BBQ sauce, in which case, why are you still reading this review?).</p>
<p>Overall: an intense but extremely enjoyable experience that restored my faith in the ghost pepper and made me a further believer in Mad Dog.</p>

That&#8217;s why I was surprised and happy as hell to see Buddha Bill&#8217;s Peach Habanero Hot Sauce. I really love shaken&#8217; those peaches, especially with my hot sauces, so I opened this one with a big grin on my face, ready to enjoy the fruit and heat combination. I didn&#8217;t expect the heat to be too intense, of course, since most of the peach and pepper combos I&#8217;ve had the pleasure of ingesting are usually quite mild. While Buddha Bill&#8217;s Peach Habanero Hot Sauce is by no means one of those sauces that will make you blow fire from the rear exit, it is quite a bit warmer than most other peach and pepper combinations I&#8217;ve had the pleasure of sampling. Peaches, orange habanero peppers, apple cider vinegar, orange juice, and brown sugar are the ingredients that come together in this beautifully crafted peach-colored sauce. Pour some on a spoon and take a taste to get the full effect before combining it with anything else. <span id="more-2896"></span>Let the mild peachy keen taste touch your tongue before the heat begins to settle in and make its through your chest and down into your belly. Not enough heat to have you reaching for something to cool you down, but enough to let you know that there are some hot peppers at work here. Both the peachy taste and the heat stick with you, linger like a wet dream, and then slowly dissipate, leaving you wanting more. There are plenty of pepper pieces and seeds in here to add some texture and visual appeal as well.</p>
<p>I deep fried some chicken wings and used this sauce as a dip. You could bake the wings in your oven and paint this stuff on for the last ten minutes just to get a nice coat for flavor. While the peach and pepper combo here is intense, nothing about this sauce will overpower your food. The balance is perfect and you&#8217;ll find that your Buddha Bill wings are some of the best you&#8217;ve ever had. If you enjoy fruity heat but like something that leans a little more toward the hot side of town, Buddha Bill&#8217;s Peach Habanero Hot sauce is a must-have on your shelf.</p>

My first impulse when I twist the cap off this stuff is to pour it on a spoon and take it straight. In fact, this sauce is excellent (not kidding here) for someone who has a cold. Forget the cough syrup. Bee Sting Honey &#8216;n&#8217; Habanero soothes the throat and helps open the sinus cavities and it tastes a lot better than cough syrup. I wouldn&#8217;t lie to you. This isn&#8217;t something I could make up. There&#8217;s another way I use this sauce. I started by accident. It makes a great pancake syrup. The honey provides the sweetness you expect from a pancake syrup and the habaneros give your cakes a nice little kick.<span id="more-2890"></span><br />

Bee Sting Honey &#8216;n&#8217; Habanero</a> is a thick sauce (though it still pours well) with a rich honey color and lots of slivers of bright orange habanero throughout. Onions, lemon juice, cayenne peppers, black pepper, and cane vinegar are also part of the cast of characters that makes this sauce work for its money. It clings nicely to whatever you pour it on, making it an ideal glaze, particularly for a holiday ham. It also makes a nice side dip. If you&#8217;re planning a party and want to introduce your guests to something with a bit of a kick while not overloading them with heat, Bee Sting is a good choice. All but the weakest of your guests will be able to handle this heat and the sweetness of the honey will work well with a variety of finger foods. Needless to say, painting it on your chicken wings is also a must. Grab a bottle and get stung.</p>

Besides the scotch bonnets, this sauce contains nothing but vinegar, some salt, and a few spices. Many of these piquant sauces are made using cayenne or similar peppers, so I was happy to taste the scotch bonnets here.</p>
<p>In my book, the use of the scotch bonnets is what sets this sauce apart from other similar sauces. They give it a little better kick than most of the piquant classified sauces I&#8217;ve tasted, and I absolutely love the flavor of the scotch bonnet, so I find myself using this sauce frequently when I eat anything of the Mexican persuasion. The rich red color of this sauce is appealing and the flavor is smooth, providing a perfect complement to these foods. <span id="more-2871"></span></p>
<p>It&#8217;s also a great addition to a pot of chili and a nice side companion to guacamole dip.  A generous amount of pepper seeds floating throughout this sauce gives it a good texture and adds to the overall presence of the heat. Pure, simple ingredients make this a perfect sauce for someone who wants to go traditional and doesn&#8217;t look for a lot of overkill in the hype department. There are no fancy packages or gimmicks. Baron Blazing Hot Sauce is simple sauce made hot.</p>

Actually, it comes from Bethany Beach in Delaware. As far as beaches go, you don’t hear about Bethany Beach all that much, but you should hear about this grilling sauce because it’s quite nice. Flexible, too, since while it’s called a grilling sauce, on the side of the label it’s referred to as a “dipping sauce and marinade for grilled or smoked pork, beef, seafood, chicken or wild game.”</p>
<p>That sounds nearer to the target because <a href="http://www.insanechicken.com/bethany-blues-bbq-pit-papaya-grilling-sauce.html" target="_blank">Bethany Blues Papaya Grillin&#8217; Sauce</a> has very little in the way of viscosity going for it. In other words, it won’t coat a piece of meat on a grill the way a traditional barbecue sauce would. <span id="more-2863"></span>But with it’s acidity from tomatoes, vinegar, and lime juice, and its papaya fruitiness, it does make a richly flavored marinade that will work its way into the fibers of your raw animal flesh.</p>
<p>Bethany Blues is composed of a small selection of good, well-chosen ingredients: tomato concentrate, brown sugar, apple juice, corn syrup, vinegar, molasses, fresh squeezed lime juice, ripe papaya, garlic, salty, red pepper, anchovies, and natural spices. Surprisingly, it’s not overly sweet, the more savory ingredients (tomato, vinegar, garlic, anchovies) doing a good job cutting through the sweeter ones. As a result, it imparts great flavor that won’t overwhelm the natural flavors of the food you use it on.</p>
<p>I can see adding this to the sauce for a stuffed cabbage, especially with the vinegar and apple juice. My other’s recipe is based on guava jelly and chili sauce, and Bethany Blues would complement those ingredients very nicely. It’s actually the same consistency as tomato juice and if I had vodka in the house at the moment, I’d be tempted to make a Bloody Mary out of it. Not to flavor it, but to use it as the tomato juice component. I have a feeling I’m going to find lots of uses for this.</p>

In fact, my nose is still running from the peppery heat. I love hot wings and I make them often, but <a href="http://www.insanechicken.com/uncle-dougies-chicago-style-wing-sauce.html" target="_blank">Uncle Dougie’s Chicago Style Wing Sauce</a> proves that you can teach on old dougie – er, doggie – new tricks.</p>
<p>Dougie prints a recipe for the wings right on the label, and though it differed from I usually make wings, I decided to do it his way. Well, right now, his way is the only way as far as I’m concerned. These were some very tasty wings and while they weren’t deadly hot, they had a nice even spiciness that made my nose run, my brow sweat, and my mouth asking for more.<br />

The sauce itself consists of “red peppers, peppers, malt vinegar, vinegar, salt, natural spices and seasoning, sugar, and other natural flavors.” An astounding lack of specifics in terms of which kind of peppers and which kind of spices were used, but that’s OK. I understand it’s a competitive business. Suffice to say Uncle Dougie’s Chicago Style Chicken Wing Marinade makes some of the best wings you will ever taste.</p>
<p>Truth to tell, I’m not even sure I know what “Chicago style” is all about, but I’m sold on the idea. And as Dougie is based in Barrington, Illinois, I assume he knows what he’s doing. Take it from me: do it his way, and you’ll be a very happy diner.</p>

But I’ll reveal more. It’s worth it.</p>
<p>First of all, if it says Blair on the label, you know two things: it’s going to be good and it’s going to be hot. And Death Rain is definitely good and hot – and this is the medium version, too, though the label still says “Warning!” This delightful, burnt-sienna-colored spice blend is composed of cayenne pepper, garlic, onion, paprika, salt, celery seed, rosemary, oregano, turmeric, and sage. Clearly, this mix is a foodie’s dream, delivering not just good heat but also a blend of delightful flavors that you’d probably want on your food anyway.<span id="more-2828"></span></p>
<p>I’ve been applying Death Rain (liberally, of course) mainly to chicken, though I also used it in a meatball mix. The flavors really do stand out in your food. I’ve also sprinkled a little on scrambled eggs as though it was cracked pepper. This stuff just adds wonderful flavor to anything it’s in or on. Another great product from the sick folks at Blair Sauces.</p>
