			<content:encoded><![CDATA[<p>We know you love your chili peppers and love having such a nice selection of <a href="http://www.insanechicken.com/hot-sauce/">hot sauce</a> and <a href="http://www.insanechicken.com/bbq-sauce/" target="_blank">BBQ sauce</a> at your fingertips right here on Insane Chicken. But when you can’t get your order fast enough, it is sometimes nice to have a basic recipe that you can use as a base so you have great flavor and the ability or spice it as you want.</p>
<p>This &#8220;basic&#8221; hot sauce is a super one to start out with as it is a quick and easy recipe that even a beginner cook can handle. This hot sauce recipe can be used in any recipe that calls for hot sauce.</p>
<p><strong>Basic Hot Sauce Recipe</strong></p>
<p>1 large onion, finely chopped<br />
2 large ripe red tomatoes, finely chopped<br />
1 large green bell pepper, finely chopped (if desired, a red bell pepper can also be used)<br />
1 large hot chile pepper, finely chopped<br />
1/4 cup white vinegar<br />
2 tablespoons tap water<br />
2 1/2 tablespoons olive oil<br />
1/2 teaspoon salt<br />
1/2 teaspoon ground pepper</p>
<p>Note: If seeds from the tomatoes bother you&#8230;run them through a blender and then strainer to remove the seeds. In addition, if you like more &#8220;heat&#8221; to your hot sauce increase to 2 chopped chile peppers and an additional 1-2 teaspoons of tap water.</p>
<p>In a large mixing bowl combine together all of the above ingredients in the order they are given in the recipe, mixing after each addition. If you like your hot sauce really smooth you can pour it into a blender and process for 20-30 seconds. Once done mixing, pour the hot sauce into a large glass jar and refrigerate. It will keep for up to several days in your refrigerator.</p>

In fact, my nose is still running from the peppery heat. I love hot wings and I make them often, but <a href="http://www.insanechicken.com/uncle-dougies-chicago-style-wing-sauce.html" target="_blank">Uncle Dougie’s Chicago Style Wing Sauce</a> proves that you can teach on old dougie – er, doggie – new tricks.</p>
<p>Dougie prints a recipe for the wings right on the label, and though it differed from I usually make wings, I decided to do it his way. Well, right now, his way is the only way as far as I’m concerned. These were some very tasty wings and while they weren’t deadly hot, they had a nice even spiciness that made my nose run, my brow sweat, and my mouth asking for more.<br />

The sauce itself consists of “red peppers, peppers, malt vinegar, vinegar, salt, natural spices and seasoning, sugar, and other natural flavors.” An astounding lack of specifics in terms of which kind of peppers and which kind of spices were used, but that’s OK. I understand it’s a competitive business. Suffice to say Uncle Dougie’s Chicago Style Chicken Wing Marinade makes some of the best wings you will ever taste.</p>
<p>Truth to tell, I’m not even sure I know what “Chicago style” is all about, but I’m sold on the idea. And as Dougie is based in Barrington, Illinois, I assume he knows what he’s doing. Take it from me: do it his way, and you’ll be a very happy diner.</p>

			<content:encoded><![CDATA[<p><img class="alignleft" title="Defcon Wing Sauce Review" src="http://www.insanechicken.com/images/T/xctmpAAn7yf.png" alt="" width="101" height="158" />I’m a guy who likes big flavors and frankly, while I love buffalo wings I rarely make them. That’s because I make buffalo drumsticks. Bigger, get it? So when I got my hands on a bottle of <a title="Defcon Wing Sauce" href="http://www.insanechicken.com/defcon-sauce-defense-condition-2-all-purpose-wing-sauce.html">Defcon’s wing sauce</a>, I immediately went out and bought some nice meaty drumsticks. I seasoned them, backed them for an hour, tossed them with butter, then poured on the Defcon. (Just as a side note, I’m not a big fan of either celery or bleu cheese dressing; I prefer a nice, vinegary cole slaw as a side to my drumsticks.)</p>
<p>And then I ate them. All of them. This stuff was awesome. And while it’s only the medium heat version, they were plenty spicy; spicy enough for most people except the freaks (like me) who like really, really, spicy wings.<span id="more-2782"></span> But these completely satisfied my needs for both heat and flavor. Defcon contains aged cayenne peppers, distilled vinegar, water, salt, garlic powder, cayenne peppers (again? Unaged, this time?), cream (adds a touch of extra richness to help it cling to the chicken skin), white wine vinegar, and natural flavors. The label notes that it is both MSG-free and gluten-free.</p>
<p>The double doses of cayenne peppers and vinegars are the most pronounced flavors. The garlic comes through as well, but fresh garlic would have been better than garlic powder. Some buffalo wings sauces contain butter or something intended to approximate butter, but I prefer to toss with butter before applying sauce, and I liked the addition of cream to Defcon’s sauce.</p>
<p>All in all, <a title="Defcon Wing Sauce" href="http://www.insanechicken.com/defcon-sauce-defense-condition-2-all-purpose-wing-sauce.html">Defcon’s wing sauce</a>, delivered the big flavor and good, strong kick in the lips that I crave from my buffalo wings (or, in this case, drumsticks). I would highly recommend this sauce over just about any other commercial wing sauce I’ve tried.</p>

			<content:encoded><![CDATA[<p>With fresh peppers abounding right now it’s a great time to look at a few ideas for enjoying peppers for a delicious lunch or light dinner.  Here are some great pepper sandwich ideas that you will enjoy over and over again!  They are great for a quick and easy preparation and the kids will enjoy them too!</p>
<p><strong>Mozzarella Cheesy Pepper Sandwich</strong></p>
<p>1 slice of Mozzarella cheese<br />
1 roasted red or green bell pepper, chopped<br />
1-2 slices of tomato<br />
butter and bread</p>
<p>This is a twist on the classic grilled cheese sandwich! Butter one side of each slice of bread and place one slice in a preheated frying pan, butter-side down. Place slice of cheese on top, then the chopped pepper, slice of tomato and then top with the remaining slice of bread with butter-side facing up. Fry sandwich on low heat until brown and then flip over and fry the other side.</p>
<p><strong>Spinach Mozzarella Pepper Sandwich</strong></p>
<p>This is made just like the sandwich above except you add a thin layer of fresh spinach leaves on top of your Mozzarella cheese slice and omit the slice of tomato, if you choose.</p>
<p><strong>Chicken Salad Sandwich with Roasted Red Pepper</strong></p>
<p>1 can of chopped chicken, drained<br />
3-4 tablespoons salad dressing<br />
1 teaspoon minced onion<br />
1 roasted red pepper, finely chopped<br />
salt and pepper to taste</p>
<p>In a mixing bowl combine together the can of chopped chicken, salad dressing, minced onion, chopped pepper, salt and pepper until well combined. Refrigerate chicken salad for one hour and then spoon it onto a roll and enjoy as a cold salad sandwich.</p>
<p>These 3 sandwich selections are great to serve along with some lovely tomato soup or sliced into small sandwiches for a great addition to a buffet style meal. However you choose to make them, you are going to come back to them time and time again for the fresh goodness of the pepper flavors.</p>

			<content:encoded><![CDATA[<p>When it comes to making Buffalo Wings at home there are 2 ways you can go about it and today we thought we would discuss both methods with you.</p>
<p>If you are a busy person and want a no fuss way to make homemade buffalo wings then you can purchase a variety of bottled (already prepared) barbecue sauces and marinate your chicken wings in the sauce for a few hours and then bake or grill them until done.</p>
<p>For those of you who have the time to cook and enjoy cooking you can make your own buffalo wing hot sauce at home and use that to marinade your chicken wings. One of the recipes we like to use is this spicy hot sauce recipe.</p>
<p>You will need:</p>
<p>12 chicken wings<br />
1/2 cup white all-purpose flour<br />
1/2 teaspoon Cayenne pepper<br />
1/2 teaspoon ground Paprika<br />
1/2 teaspoon table salt<br />
1/2 teaspoon ground black pepper<br />
1/4 cup butter (not margarine)<br />
1/2 cup hot sauce (your favorite brand or home made)<br />
1 clove of garlic, minced</p>
<p>In a large mixing bowl combine together the all-purpose flour, Cayenne pepper, ground Paprika, salt and ground black pepper. Pour mixture into a large plastic zipper closure bag and then place 2-3 chicken wings (at a time) into the bag and shake it up to thoroughly coat the wings. Take the wings out and place them in a single layer in a glass baking dish. Repeat until all chicken wings are coated and done.</p>
<p>Cover the baking dish and place into the refrigerator for 3-5 hours (or overnight). In a large saucepan combine together the butter, hot sauce and minced garlic and simmer on low for 5 minutes, stirring often. Remove from heat and pour mixture over the wings in the baking dish. Make sure you flip the wings over so that they get coated on both sides.</p>
<p>Place wings on a hot preheated grill and grill each side for 8-10 minutes or place the baking dish into a preheated 375 degree oven and bake for 30-45 minutes or until done. Serve with your favorite dipping sauce as a main dish or as an appetizer alone.</p>

<p>Casa Ole is a restaurant chain found in Texas, Oklahoma and Louisiana that serves authentic Mexican style foods. You will find all kinds of Mexican dishes that you and your family will enjoy.  A favorite sauce that they use is their hot sauce recipe and many people that have eaten at the restaurant in the past enjoy making this at home. You can make it at home and once you have it made, you can adjust the heat level to what you like.  Here is the recipe for the famous Casa Ole hot sauce.</p>
<p>Casa Ole Red Hot Sauce Recipe</p>
<p>1 large can stewed tomatoes<br />
1 large can whole tomatoes<br />
1 can Rotel tomatoes<br />
1 tablespoon green Tabasco sauce<br />
1 tablespoon minced garlic</p>
<p>In a large mixing bowl combine the above ingredients together in the order they are given in the recipe, stirring after each addition with a spoon by hand. Place lid on the bowl and refrigerate for 2 hours to allow the flavor to infuse.</p>
<p>This will store well for several days so that you can enjoy it often.  It is a versatile sauce that you can use in cooking great foods like enchiladas or chili rellenos, or you can eat it with chips or nachos.  It would also be wonderful in a Mexican style soup or stew to boost the flavor immensely.</p>

<p><strong>What is a banana pepper?</strong> A banana pepper is a banana shaped pepper that turns yellow, orange or red when fully ripe. This variety of pepper is very mild and on the sweet side. On the Scoville heat scale they rate at around 500 units.</p>
<p><strong>When to pick them?</strong> On average your banana pepper is ready to harvest when they turn the appropriate color and measures between 4-7&#8243; in length, depending on the particular variety that you planted. The fruit should be firm to the touch.</p>
<p><strong>How to purchase them?</strong> If purchasing them fresh from your local grocery store or farmer&#8217;s market, look for ripe (but not overly ripe) peppers that have no blemishes. You should also smell them (any moldy or funky odors should be avoided).</p>
<p><strong>How to store them?</strong> Freshly picked peppers should be used up within a few days and stored in a cool dry place in an airtight container. If you place them in a paper bag, close up your bag and place into the refrigerator.  Some varieties will then last for up to 10 days.</p>
<p><strong>How to use them?</strong> Banana peppers can be used in a variety of delicious ways. Try slicing fresh banana peppers to use as a topping on your favorite sandwich, added to your favorite stir-fry recipe or try them tossed in your favorite salad.
