Stuffed Pepper Recipe

Ingredients:

  • 4 Large green bell peppers
  • 2 Tbsp. Butter
  • 1 Tbsp. Olive Oil
  • 1/2 Cup chopped onion
  • 1/2 Cup chopped celery
  • 1 Can diced tomatoes
  • 1 large can tomato sauce
  • 2 cloves garlic, crushed
  • 2 Tbsp. oregano
  • 2 Tbsp. basil
  • 1/2 tsp. pepper
  • salt to taste
  • 1 Tbsp. hot sauce (try Hog’s Ass Habanero Hot Sauce or Mad Cat Hot Sauce)
  • 1 Tbsp. Worcestershire sauce
  • 1 Egg
  • 1 lb. ground beef
  • 1 cup cooked rice
  • cheddar cheese

Directions:

  1. Cut tops off peppers, remove seeds, chop up edible parts of removed top and set aside. Place peppers in a large pot of boiling water with a few dashes of salt. Reduce heat, cover, and simmer for 5 minutes. Drain peppers and set aside.
  2. Saute chopped green pepper, onion, and celery in butter. Add diced tomatoes, tomato sauce, olive oil, garlic, oregano, basil, pepper, salt, hot sauce, and Worcestershire sauce. Simmer for 15-20 minutes.
  3. In a large bowl combine egg, ground beef, cooked rice, and 1 Cup of tomato sauce mixture. Mix well. Stuff peppers with meat mixture. Pour remaining tomato sauce over stuffed peppers. Bake at 350 for 55-65 minutes. Top with cheese 5 minutes before removing from oven.
