Sirloin Tips with Pepper Sauce

The great thing about peppers is that you can do so much with them by incorporating them into your meals, because of the huge variety.  Each type of pepper and chili brings a different flavor to the meal.  It is a lot of fun playing with different recipes using peppers as a flavor enhancer.  We have a nice easy meal recipe for you that uses delicious red or green bell peppers and you can even kick up a bit too if you want.

This recipe makes a great dinner for weeknights since from start to finish it takes less than 45 minutes to make. Great served over the top of cooked rice or cooked pasta. (or serve the rice or pasta on the side).

Sirloin Tips with Pepper Sauce

1 1/2 lbs. beef sirloin tips (already cut into strips)
1 tablespoon minced onions
1/2 – 3/4 teaspoon ground paprika
1/2 teaspoon ground black pepper
1 tablespoon vegetable or olive oil
1 cup roasted red peppers, chopped or green peppers
1/2 cup hickory flavored barbecue sauce
1/2 teaspoon salt
2 tablespoons dried parsley
Crushed red pepper flakes (optional)

In a large frying pan, brown the beef sirloin tips with the minced onions, ground paprika, black pepper and vegetable oil until the beef is browned on all sides. Transfer mixture to a large stock pot and stir in the roasted red peppers, hickory barbecue sauce, salt and parsley. Simmer mixture over medium heat, stirring often for 20-25 minutes or done.

Serve sirloin tips with the pepper sauce with cooked rice on the side or overtop of the cooked rice.  Delicious!
