Roasted Red Pepper Tomato Soup Recipe

Ever feel the need to just have a simple supper of tomato soup and grilled cheese sandwiches?  Sometimes it is just too much work to have a big meal but you want something with a lot of flavor too.  This easy recipe is one that you will turn to time and again because of the great taste and the easy method of preparation.   Give this quick recipe for Roasted Red Pepper Tomato Soup and Grilled Cheese a try!

Roasted Red Pepper Tomato Soup Recipe

1 large roasted red pepper (roast it over a grill or in the broiler, skin removed, finely chopped)
2 cans of tomato soup + required milk as called for on the cans
1 small clove garlic, finely minced
1 tablespoon fresh basil, finely chopped
1 tablespoon fresh parsley, finely chopped
1/4 teaspoon salt
1/2 teaspoon ground black pepper
1/8 teaspoon cayenne pepper or a few shots of Tobasco or your favorite Hot Sauce

In a large kettle combine together all of the above ingredients and bring the soup mixture up to a full boil. Reduce the heat, place lid onto the kettle and simmer over medium heat for 15 minutes, stirring occasionally. Once done, serve immediately.

Note: If you like more of a red pepper taste to your soup you can use 2 large roasted red peppers.

Fresh Grilled Cheese

For your grilled cheese, you can throw on a few slices of Tomato before grilling it for an incredible fresh flavor or a green or red pepper.  When it warms up and the cheese melts over it, you will be in love.  Perfect with the delicious tomato soup!
