Recipe for Texas Style BBQ Sauce

If you are a fan of beef brisket or pulled pork, you are going to love this sauce.  Traditionally, Texas style BBQ sauce is thinner than a regular BBQ sauce you may be used to.  These are made more for a condiment and dipping sauce or to top your pulled pork sandwich. Some people use it as a mop sauce for brisket. But regardless of how you use it, it is delicious.  Not overly sweet but a nice combination of sweet and tart from the vinegar and a rich taste.

2 Tbs Oil
1 finely chopped Onion
Several Cloves of Garlic minced
3 Tbs Chili powder
2 Tbs Worcestershire Sauce
2 Tsp Dry Mustard
½ cup ketchup
½ cup Cider Vinegar
¼ cup Brown Sugar
2 cups beef stock
1 cup beer – optional
Hot Sauce to taste
Salt and pepper to taste

Heat the oil in a saucepan over medium heat. Saute the onion and garlic until the onion is softened. Stir in the chili powder and cook to combine.  Add all of the remaining ingredients and bring to a boil. Reduce heat to low and simmer at least 30 minutes to bring the flavors together. Allow to cool. Put the sauce in a blender and puree or use an immersion blender to smooth out the sauce. Serve warm
You can adjust the flavors on this to your preference. Some folks add coffee to their sauce and if you have beef drippings, that will greatly enhance the flavors.   You can also add some heat with red pepper flakes or canned chipotles or other favorite chiles you prefer.
