Meatloaf with BBQ Sauce and Stove Stuffing Mix

We love using our BBQ sauces and pepper sauces in different ways and then telling you about them.  Here is a recipe for meatloaf that utilizes a boxed stuffing mix and makes for a very nice family meal. It is great served alongside mashed potatoes (or a baked potato) and buttered corn or lima beans. We think it is great because it is quick and simple and you can really kick up your meatloaf with some extra zest and spice without having to do much extra to the recipe.

Juicy Meatloaf Recipe with BBQ Sauce

2 lbs. lean ground beef
1 box stuffing mix (for chicken or turkey)
1 cup water
2 large eggs, well beaten
1/2 cup of your fav  BBQ sauce (divided)
1/2 teaspoon salt
1/2 teaspoon ground black pepper
(optional) 3 tablespoons finely diced onions
(optional) 2 tablespoons finely diced celery

Place all of the ingredients into a large mixing bowl and mix with your hands until combined. Shape beef mixture into a loaf shape and place into a large baking dish or loaf pan. Place loaf pan into a preheated 350 degree oven and bake for 40 minutes. Remove from oven and pour the remaining 1/4 cup of  BBQ sauce on top. Place loaf pan back into the oven and continue baking for an additional 10-15 minutes or until done.

*Tip* Meatloaf freezes well. To freeze, let it cool completely and wrap in foil or place into a freezer container. Will keep frozen (fully cooked) for up to 1 month.
Try this recipe using different types of BBQ sauce.  Sweet and spicy or hot and flavorful.  It can really change the flavor of your meatloaf.
