6 Habanero peppers, chopped
1 tablespoon of olive oil
1 clove of garlic, minced
1 (6 ounce) can tomato paste
1 1/3 cups of white vinegar
1/2 teaspoon salt
3/4 teaspoon ground black pepper
1 teaspoon fresh lime juice
In a large frying pan heat up the olive oil over medium heat and stir in the chopped Habanero peppers and minced garlic. Simmer for 4-5 minutes or until peppers have softened up a bit. Stir in the tomato paste and 1 cup of the white vinegar and simmer for 3-4 minutes, stirring often. Pour in the rest of the white vinegar, salt, ground black pepper and the fresh lime juice. Continue to simmer the ingredients for 5 minutes, stirring often.
Once done let it cool in the pan for 5-10 minutes and then pour into an airtight container and refrigerate it…it should keep for up to 4 days if refrigerated after cooking it.
