How to Roast Peppers in a Microwave Oven
If you are pressed for time or experiencing a lot of bad weather, sometimes you are not able to grill when you want to. The good news is that you can certainly roast your freshly picked peppers in a microwave oven. Here is some direction and tips on how to do that.
Always remember, when handling hot peppers you will need to wear a pair of rubber gloves to protect the skin on your hands. Don’t forget your eyes! You should purchase a cheap pair of plastic protective glasses or wear your own eyeglasses to protect your eyes from splattering pepper juice. It’s a good idea to have them in the kitchen anyway for other items you may be cooking.
Wash your peppers to remove any dirt and debris. Lay them onto a cutting board and chop off their steams and remove all of the seeds and membranes. Lay peppers on their sides in a glass microwave-safe baking dish. Cover the dish with a lid or plastic wrap. Place the baking dish in the center of your microwave oven and microwave on high power for 6-7 minutes. Make sure your microwave oven has a rotating turntable so that the dish is constantly rotating. If your microwave does not have the feature, you will need to manually turn the dish every 30 seconds or so.
Once the time is up, carefully remove the baking dish from the microwave and let it stand (covered) for 2-3 minutes to let it steam up. (You should see a lot of steam and moisture inside the container). After the time has elapsed, carefully remove the lid or plastic wrap covering and remove your peppers from the baking dish. Once they are cool, carefully pull off the pepper’s skin and discard it. Place your newly roasted peppers into a container and refrigerate or freeze them.
