Homemade Pickled Peppers Recipe

As spring comes rolling in, we are busy getting the ground ready for all of those gorgeous pepper plants we are going to be planting; Green peppers, Jalapeno plants, red chiles, Habanero peppers and all of your other favorites.  Here is an easy and delicious recipe for pickling your peppers so you can enjoy them all year long. It also makes a great gift to share the fruits of your harvest with neighbors and friends.

Pickled Peppers Recipe

Green Peppers, chopped
1 teaspoon granulated sugar
1/2 teaspoon pickling spice
1/4 teaspoon alum
white vinegar
glass mason jars (quart size) + seals and rings

Chop the green peppers into small pieces. Fill each of your quart sized canning jars with the chopped green pepper pieces. Add a teaspoon of sugar, 1/2 teaspoon pickling spice and a 1/4 teaspoon alum to each of your glass mason jars. Set aside.

In a saucepan bring some vinegar to a rapid boil and boil the vinegar for approximately 1 minute. Turn off heat. Pour hot vinegar into each mason jar, leaving about 1/2″ an inch headspace at the top. Place seal and rings onto each jar while they are still hot. Let them cool fully before moving them.
