Breaded Jalapeno Pepper Poppers Recipe

8 oz. block of Philadelphia Cream Cheese, softened
8 oz. bag of cheddar cheese, shredded
1/4 cup low-fat or reduced-fat mayonnaise
12 Jalapeno peppers
2 large eggs, beaten
1 tablespoon cold milk
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 1/2 cups dry bread crumbs

Wash and dry the Jalapeno peppers. Remove stem and slice each pepper in half (length-wise), remove seeds and membranes. Set aside. In a large mixing bowl combine together the cream cheese, shredded cheddar cheese and the mayonnaise. Beat mixture until smooth and then use a knife to stuff it into each Jalapeno half.

In a large mixing bowl combine together the eggs, milk, salt and ground black pepper until well combined. Using your hands or a set of tongs you want to dip each Jalapeno half into the milk mixture and then roll each half into the dry bread crumbs. Set each half on a baking sheet that has been sprayed with nonstick baking spray. Continue dipping and rolling each half until done. Place baking sheet into a preheated 350 degree oven and bake for 20 minutes or until done.

Serve warm with your favorite dipping sauce or alone. This is a recipe that you can partially prepare ahead. You can stuff them and dip and apply the coating right before you pop them in the oven for the best crispness.
