I want you to know that I am writing this immediately – I mean, immediately – after sampling the product. In fact, my nose is still running from the peppery heat. I love hot wings and I make them often, but Uncle Dougie’s Chicago Style Wing Sauce proves that you can teach on old dougie – er, doggie – new tricks.

Dougie prints a recipe for the wings right on the label, and though it differed from I usually make wings, I decided to do it his way. Well, right now, his way is the only way as far as I’m concerned. These were some very tasty wings and while they weren’t deadly hot, they had a nice even spiciness that made my nose run, my brow sweat, and my mouth asking for more.

The sauce itself consists of “red peppers, peppers, malt vinegar, vinegar, salt, natural spices and seasoning, sugar, and other natural flavors.” An astounding lack of specifics in terms of which kind of peppers and which kind of spices were used, but that’s OK. I understand it’s a competitive business. Suffice to say Uncle Dougie’s Chicago Style Chicken Wing Marinade makes some of the best wings you will ever taste.

Truth to tell, I’m not even sure I know what “Chicago style” is all about, but I’m sold on the idea. And as Dougie is based in Barrington, Illinois, I assume he knows what he’s doing. Take it from me: do it his way, and you’ll be a very happy diner.

I’m a guy who likes big flavors and frankly, while I love buffalo wings I rarely make them. That’s because I make buffalo drumsticks. Bigger, get it? So when I got my hands on a bottle of Defcon’s wing sauce, I immediately went out and bought some nice meaty drumsticks. I seasoned them, backed them for an hour, tossed them with butter, then poured on the Defcon. (Just as a side note, I’m not a big fan of either celery or bleu cheese dressing; I prefer a nice, vinegary cole slaw as a side to my drumsticks.)

And then I ate them. All of them. This stuff was awesome. And while it’s only the medium heat version, they were plenty spicy; spicy enough for most people except the freaks (like me) who like really, really, spicy wings. But these completely satisfied my needs for both heat and flavor. Defcon contains aged cayenne peppers, distilled vinegar, water, salt, garlic powder, cayenne peppers (again? Unaged, this time?), cream (adds a touch of extra richness to help it cling to the chicken skin), white wine vinegar, and natural flavors. The label notes that it is both MSG-free and gluten-free.

The double doses of cayenne peppers and vinegars are the most pronounced flavors. The garlic comes through as well, but fresh garlic would have been better than garlic powder. Some buffalo wings sauces contain butter or something intended to approximate butter, but I prefer to toss with butter before applying sauce, and I liked the addition of cream to Defcon’s sauce.

All in all, Defcon’s wing sauce, delivered the big flavor and good, strong kick in the lips that I crave from my buffalo wings (or, in this case, drumsticks). I would highly recommend this sauce over just about any other commercial wing sauce I’ve tried.

Black Swan’s Wing Commander wing sauce falls into the category of sauces you will either love or hate. Black Swan’s Wing Commander is billed as a spicy wing sauce, which it most definitely is.

There’s no heat here, but the sauce imparts a distinct Asian flavor personality that is sure to please anyone who has a taste for Asian cosine. The inclusion of honey, sesame seed, soy sauce, and fresh ginger attribute to the Asian characteristics, with mustard flour, salt, two types of vinegar (distilled white and malt), red peppers, and additional spices rounding out the ingredient roster.

The thing about this wing sauce is the wings it creates. This was different than any wing I’ve ever had, and while they will never replace wings made with Pappy’s Moonshine Madness, I did enjoy the change of pace.

With the Asian thing going on so strongly in Black Swan’s Wing Commander, I decided to do some big shrimp with it. My favorite Chinese takeout place has a bunch of different shrimp dishes, which I order frequently. I wanted to see if I could enjoy my own shrimp dish. I bought a couple pounds of gulf shrimp and placed them in a baking dish, then I covered them in Black Swan Wing Commander and baked them in the oven for about twenty minutes. The spicy, buttery taste of the Wing Commander (although the label states no dairy products) came together with the shrimp in a well-balanced, distinctly Asian way. Everyone in my family enjoyed them.

I love Cornish hens and had a feeling Black Swan’s Wing Commander would be a perfect complement. I added a little butter to the sauce and injected two hens. I periodically basted the hens with the remainder of the sauce. My wife the Cornish hens for dinner. They came out moist and the meant fell away from the bone. The flavors of Wing Commander diffused through the hens and gave them a sweet, slightly smoky taste that makes my mouth water just thinking about it.

I believe this wing sauce would do well with any pork dish and most fish dishes. I haven’t tried it this way yet, but it’s on my menu. If you like flavors with an Asian characteristic, you’ll want to keep Black Swan’s Wing Commander wing sauce on your shelf.

Hooters 3 Mile Island Wing Sauce is a hot combination of pepper ingredients that include aged red cayenne peppers, aged red Tabasco peppers, jalapeno peppers, and aged habanero peppers. While this sauce isn’t going to burn any holes in your tongue, it’s quite a bit hotter than the original Hooters Wing Sauce.

Hooters 3 Mile Island is a classic wing sauce with an appealing flavor and enough heat to warm your lips and keep them that way. There’s a bit of a heavy vinegar overtone to the sauce, but it disappears in the cooking process, leaving behind a peppery heat.

Besides being a classic wing sauce, Hooters 3 Mile Island made a great chili addition. The consistency of the sauce, as well as the flavor, is well suited to Texas style chili with big hunks of steak, peppers, and onions.

For me, I’d rather use the original Hooters Wing Sauce on my chicken wings, but 3 Mile Island works as an awesome steak sauce, a kicker for beef stew, and as a topping for baked chicken breast. I tried this sauce in baked beans too.

There’s not a real distinction in flavor between the pepper ingredients, which is why the Hooters 3 Mile Island is better for blending with foods than it is for coating foods. With a lot of sauces, the ingredients are so distinct from one another that I go out of my way to find something to eat them on. With 3 Mile Island, I like the way it adds to the flavors of something like a pot of chili, but as a sauce I want to lick off my fingers, it doesn’t work for me. There are many sauces more suited to this.

All that aside, there’s no doubt 3 Mile Island will find its share of fans. The slightly-warm-without-going-over-the-top taste will appeal to all but the most hardcore heat fans, and the straight, no-pretense hot pepper combination will please classic wing sauce lovers.

This is the kind of barbecue sauce that will have even the pickiest barbecue sauce connoisseurs nodding their heads in excited agreement over the quality of what’s inside the bottle. Made by the same folks who make Louisiana Lickers Sauce, Quaker Steak and Lube Buckeye BBQ is a surprising treat straight out of the bottle.

This is another plate-licking delight. Following the same everything-but-the-kitchen-sink style of ingredient combination as it’s Louisiana Lickers Sauce counterpart, Buckeye BBQ includes ketchup, hot sauce, Tabasco Sauce, cayenne pepper sauce, ginger, and corn syrup. The result is a very sweet sauce with an underlying heat that creeps up on you.

Quaker Steak and LubeBuckeye BBQ Wing Sauce is so sweet you can almost imagine candying an apple with it. The heat doesn’t come until you’re well into the tasting marathon, and by the time your forehead breaks out into a sweat, you’re so addicted to the sauce that you continue to eat in spite of the sweaty forehead.

Here’s the beauty of it. The balance of sweet and hot is so perfect that neither of them is too much. If it wasn’t for the hot aspect of Buckeye BBQ, the sweet factor might have been too much, but the genius who put this together took everything into account. Buckeye BBQ is one of those barbecue sauces you could drink from the bottle, and believe me when I say it, I’ve done just that.

Let’s talk about what Buckeye BBQ will go with. First and foremost, this is an excellent hotdog topper and it’s superb on burgers. It tastes great on shrimp on the grill. No-brainer uses for this sauce include ribs, steak, and chicken on the barbecue grill. I also used it as a straight steak sauce. It blows any of the top-name steak sauces off the table. I’ve even used this sauce for French fries and on pizza. Seriously, nothing has been off limits so far. Anything I can find as a canvas to paint this sauce with, I use it. It may be billed as a barbecue sauce, but it’s truly a heavy duty, all-around work sauce. My wife particularly enjoyed it on chicken wings.

Besides the excellent taste factor, the sauce is pretty. It’s blood red and comes in a tall bottle with a metal clasp cork-style top. It pours smooth and has a decent cling factor too.

If you want to experience one of the most unique barbeque sauces around, give Buckeye BBQ a try. I can almost guarantee you will make it a part of the family.

There are people who swear by Hooters hot wings. The original Hooters Wing Sauce can now be purchased in a jar, from the Hooters kitchen to yours, allowing you to enjoy Hooters hot wings in the comfort of your own home.

Let’s start with the sauce in the jar. It’s bright orange and has an extremely pasty consistency. Don’t bother tasting it straight from the jar. You’ll get the wrong impression. It doesn’t taste very good that way. Something happens when you heat it up, though. There’s a transformation that turns the Hooters Hot Sauce into Super Hooters.

The paste melts down and turns a darker, richer, fiery orange color, and the ingredients come together in a culinary collision that creates the taste everyone seems to be raving about.

The sauce is made with real butter and milk. There’s also vinegar and salt. Beyond that, I can’t really tell you what the ingredients are, which is the way the Hooters people probably want to keep it. What I can tell you is this: There are enough secret spices in the sauce to make it sufficiently warm and extremely pleasing to eat. The presence of butter and milk makes the Hooters Wing Sauce creamy and smooth on the tongue; that’s one of the things I really dig about it.

The absolute best way to use this sauce is to heat it up first and pour it all over chicken wings in a baking dish. Don’t add anything to it. Place those babies in the oven and let it rip. Perfect for football games, Xbox night, or a horror movie marathon. You might want to be sure to have plenty of wings on hand if you’re having company, though. I ate a dozen myself and stopped only because I wanted to make sure everybody else got some. Something about the sauce (I’m pretty sure it’s that creamy hot texture and flavor combination) is hard to ignore and highly addicting.

I can’t imagine another way to use Hooters Wing Sauce. It is what it is. Overall, it’s a Buffalo-style wing sauce with a nice warmth, excellent taste, and a clingy, buttery texture that brings chicken wings alive.

I could write a book about Louisiana Lickers Sauce. The ingredients alone would fill a book, so I won’t be listing all of them; I’ll simply talk about the ingredients I feel play a primary role in this sauce’s success.

First off, Quaker Steak’s Louisiana Lickers Sauce is billed as a wing sauce, and make no mistake about it, this is one of the finest sauces you could ever top your chicken wings with. I did it and ate a baker’s dozen in one sitting. It was a beautiful experience. The thing is, I think I could drink this sauce straight from the bottle and be perfectly happy. It isn’t called Louisiana Lickers Sauce for nothing. Pour some on a plate and watch it disappear, literally, because you’ll lick the plate clean.

This is what I like to call an everything-but-the-kitchen-sink concoction. Ketchup and a cayenne pepper-based hot sauce act as a foundation upon which several other ingredients are added. These ingredients include, but trust me, are not limited to, a variety of oils, margarine, white wine, barley malt, parmesan cheese, onion, garlic, bread crumbs, brown sugar, ginger, vinegar, and assorted spices. I visualize a mad scientist type guy in a kitchen laboratory, throwing all these ingredients into a big pot of bubbling brew. As wild a mix of ingredients as there in this sauce, they work together like magic.

This sauce is probably artery clogging. It needs to be shaken well before you open it. About a quarter inch of oil sits on top of the sauce. A good, thorough shaking blends the oil in, and artery clogging or not, delivers a rich, satisfying mixture. All of those fine ingredients I’ve talked about are visible throughout Louisiana Lickers, permeating every pour. The ingredients cling to your food and you’ll feel them as you bite down. Louisiana Lickers Sauce is a 3D dining experience.

Pairing this wing sauce with other foods was easy. It isn’t particular about the culinary company it keeps. It goes great on hotdogs and hamburgers, it makes a great dip for French fries and chicken nuggets, and it’s perfect for fish, whether it’s fresh catch of the day or good ol’ fish sticks. The fact is, this sauce is fit for just about any food. I find myself searching the cabinets for an excuse to use it, then I realize I don’t need one. I can pour it on a plate and use my fingers

Uncle Dougie’s Chicago Style Chicken Wing Sauce is a marinade that’s spicy without being hot. Red peppers, peppers, and malt vinegar make up the bulk of the flavor, with a little sugar and some spices and seasonings thrown in for good measure.

Nothing fancy, but definitely a tasty marinade for chicken wings, chicken breast, or even as a turkey injection sauce (with melted butter added).

The marinade needs to be shaken well to blend the spice and season ingredients, which settle to the bottom of the bottle.

What I found to be the best way to use Uncle Dougie’s Chicago Style Chicken Wing Sauce was to dump the bottle in a bowl, add a stick of melted butter, and follow it up with three heaping tablespoons of Orange Krush hot sauce. The Orange Krush is a habanero base that adds a nice heat kick to the wing marinade. I soaked about twenty wings in the marinade for three hours, put them in a deep baking dish, then added the rest of the sauce and cooked them for about an hour and a half. I drained the marinade and let the wings go for another twenty minutes. What I ended up with was a golden brown pan of wings that had an enjoyable flavor with a subtle, spicy heat. If you like your wings hotter, you could add more of the Orange Krush, or choose your own favorite sauce, to notch it up. This particular recipe was good enough for the whole family to eat, without giving anyone heat overdose.

As a turkey injection, Uncle Dougie’s Chicago Style Chicken Wing Sauce with butter and a good bit of Tony’s seasoning works well. Inject the mixture throughout the turkey and you’ll have a juicy, flavorful bird your holiday guests will enjoy. You can also use the mixture on chicken breasts on the grill. Brush it on at the start of the cooking process, then periodically throughout, and your grilled chicken breasts will stay moist and take on the flavors of your marinade sauce.

While there’s nothing extraordinary about this wing marinade, it makes a great base for adding your own flavors, allowing you to turn a good marinade into an excellent marinade.
