Our pepper lovers and chili heads are going to love this one. There have been many requests for a spicy hot Ghost Pepper Salsa recipe that you can make easily at home. At Insane Chicken we carry a large range of hot sauces made with the Bhut Jolokia Pepper that you can use in a salsa if you do not have access to the pepper itself.

For those of you that dare to eat a salsa made with the Hottest pepper in the world, let’s give it a try! * This salsa packs a LOT of heat so if you don’t like hot & spicy salsas, this recipe isn’t for you.* Also you MUST wear gloves and eye protection when working with this pepper for protection of your skin. This pepper juice will burn.

Ghost Pepper Salsa Recipe

6 large tomatoes, peeled and cut into chunks
1 clove garlic, minced
1 small onion, finely chopped
1 large ghost pepper, finely chopped
1 teaspoon vinegar
1/2 teaspoon ground black pepper
2 tablespoons tomato sauce (optional)
1/2 teaspoon salt
1/4 cup water

Place all ingredients into a large saucepan and simmer over low heat for 5 minutes stirring often so that it doesn’t stick to the pan. If needed…you can add more water if sticking becomes an issue. Turn off burner and let sit for 5 minutes. Pour mixture into a blender and process on medium speed for 1-2 minutes for chunky-style salsa and 3-4 minutes for a smoother salsa. If you like salsa with a lot of “heat” use 2 large ghost peppers instead of one.

* This salsa is great as a condiment to go along with any Mexican dish or if you dare…try it with your favorite brand of Tortilla chips.

When hosting game day at your place or if you are going to someone else’s home for dinner or a fun time, finding a different and delicious appetizer to bring can be a challenge sometimes. You want something that whips up pretty quickly without a big mess to clean up.

Here is a breaded Jalapeno Pepper Poppers recipe is a pretty easy to make and makes for a great appetizer. Great for Superbowl parties or Playoff time.

Breaded Jalapeno Pepper Poppers Recipe

8 oz. block of Philadelphia Cream Cheese, softened
8 oz. bag of cheddar cheese, shredded
1/4 cup low-fat or reduced-fat mayonnaise
12 Jalapeno peppers
2 large eggs, beaten
1 tablespoon cold milk
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 1/2 cups dry bread crumbs

Wash and dry the Jalapeno peppers. Remove stem and slice each pepper in half (length-wise), remove seeds and membranes. Set aside. In a large mixing bowl combine together the cream cheese, shredded cheddar cheese and the mayonnaise. Beat mixture until smooth and then use a knife to stuff it into each Jalapeno half.

In a large mixing bowl combine together the eggs, milk, salt and ground black pepper until well combined. Using your hands or a set of tongs you want to dip each Jalapeno half into the milk mixture and then roll each half into the dry bread crumbs. Set each half on a baking sheet that has been sprayed with nonstick baking spray. Continue dipping and rolling each half until done. Place baking sheet into a preheated 350 degree oven and bake for 20 minutes or until done.

Serve warm with your favorite dipping sauce or alone. This is a recipe that you can partially prepare ahead. You can stuff them and dip and apply the coating right before you pop them in the oven for the best crispness.

If you are into home gardening you are going to want to keep your backyard garden clean and clear from all harmful pests that can destroy your home garden in just a matter of days. Here is a homemade recipe for Garlic Pepper Pest Control Spray. This is great way to protect your garden and plants and not have to use harmful chemicals either.

Garlic Pepper Pest Control Spray Recipe

2 garlic bulbs, chopped
6 large red chili peppers, finely chopped
2 tablespoons vegetable oil (not olive oil)
2 tablespoons liquid dishwashing soap
7 cups of tap water

Place the chopped garlic bulbs, chopped chili peppers and 7 cups of water into a large blending container and process until smooth. Pour mixture through a strainer and place into a large glass container. Pour in the vegetable oil and liquid dishwashing soap. Stir until everything is combined. Use an old funnel and pour mixture into a large spray bottle. Make sure you clearly mark your spray bottle as containing your Garlic Pepper Pest Control Spray so that others in your household know what it is.

Lightly spray the mixture on and around your garden plants. It is good for repelling potato bugs, ants, grubs and other harmful small critters and pests. You will also want to spray this mixture around your garden perimeter to keep groundhogs, rabbits, deer and other animals out of your garden.

This is a recipe for a natural bug and pest spray that is not harmful to your plants, animals or people. Just make sure you wash your produce well before eating!

For some pepper lovers the hotter the sauce the better. The West Indies has been known to have very hot peppers and the pepper sauce there is used like a condiment much like we use Tobasco. For the natives of the Caribbean Islands, being without the pepper sauce is a crime.

I know many of our readers enjoy hot, spicy pepper sauces so I found an easy recipe that you would enjoy with your Caribbean style foods.

West Indian Pepper Sauce Recipe

(makes about 4 cups pepper sauce)
Ingredients:
• 2lbs wiri wiri pepper or scotch bonnet peppers (stems removed)
• 1 green mango or 2 large cucumbers, peeled and diced
• 1 head of garlic, peeled
•    3 tsp salt
•    1/2 cup vinegar

Directions
1. Rinse peppers and remove all stems
2. Add about 1 cup of peppers to a blender with a little bit of mango or cucumber, a little bit of vinegar and garlic, blend until smooth.
3. Repeat process until all ingredients are used up and sauce is smooth and not watery (it should have a tomato/pasta sauce texture).
4. Store sauce in a mason jar. Should last up to 6 weeks refrigerated

I saw many other recipes for a West Indies style pepper sauce, but this one seemed more cultural and definitely easy on the ingredient side. The flavor is in the traditional island style and it will taste wonderful with your favorite jerk meats. Give it a try next time you plan an island meal.

Salads and lettuce can be a bland, tasteless vegetable without the addition of some flavoring and spice to your dish. Some lettuces do have a bit of a bite to them like Arugula, but for the most part, it is up to the creator of the salad to bring in the flavor. For those that love some heat, here is a great recipe to kick up your next salad.

Habanero Pepper Salad Dressing Recipe

You do need gloves on when handling the habanero pepper and refrain from touching your eyes or face.

To make the Habanero Pepper Salad Dressing, you will need 2 small Habanero peppers, 1/2 cup light virgin olive oil, 2 tablespoons of red wine vinegar, dash of black pepper and a dash of salt.

You will want to wash your peppers and remove the stems. Cut the pepper into strips and remove the seeds and membranes. Place the pepper strips into a blender along with the extra light virgin olive oil, red wine vinegar, black pepper and salt. Cover the blender container and process until smooth. Use it immediately on any garden style salad and refrigerate leftovers which will keep for up to 3 days.

What a great addition to your next salad! Next time you are in the mood for something spicy and full of flavor, give this one a try. I am thinking this might be good as a marinade too.

Pepper steak is an easy dish to make so it has become a favorite of many cooks. There are so many different variations that you can create with simple ingredients like peppers and steak. The American Version is a nice saucey dish usually served over rice. There are also Asian versions and many people use the Kikkoman hoisin sauce for pepper steak in the preparation of the dish.

The Chinese version works up quickly and it is delicious. All you need is the Kikkoman Hoisin sauce, a pound of sirloins steak or round steak, cut into thin strips, 2 bell peppers and an onion. Simply use a wok or high heat pan and fry the steak in vegetable oil to just tender, maybe a minute or two. Take out the meat and stir fry the vegetables and let them soften a bit. Add back in the meat and ¼ cup of the hoisin sauce and stir until everything is coated. Serve with rice. Delicious!

The American version of Pepper Steak is similar but adds garlic, tomato sauce, soy sauce and other items to create a nice sauce the steak and peppers are cooked in. There are so many ways to use a combination such as peppers and steak. Rolling it into a flat bread and adding some cabbage strips or lettuce would make a good crunch and a delicious sandwich. Or how about adding some rice into it and rolling into egg roll wrappers. Tasty!

Get creative with your steak and peppers by using a premade sauce like the Kikkoman Hoisin or create your own sauce and see what tasty meals you and your family can enjoy!

The holidays are almost here, amazing as that sounds! That means lots of friends and family to entertain and have some fun with. But it also means, what do I serve or what can I bring with me that is easy to prepare and delicious too?

Here is an easy recipe for a delicious Pepper Spread that you can serve with any type of crackers or as a dip for fresh cut vegetables. It is perfect for any holiday table,

Pepper Cracker Spread Recipe

1/2 of a green bell pepper, finely chopped
1 chili pepper, finely chopped
1 clove minced garlic
1/4 to 1/2 cup olives, finely chopped
1 (8 ounce) pkg. cream cheese, softened

Soften your block of cream cheese by sitting it out at room temperature for 10-15 minutes. While it is softening, finely chop your bell pepper, chili pepper and olives. Mince garlic using a garlic press. Mix all of the above ingredients together until well blended. This spread tastes great on a variety of crackers. Refrigerate any leftovers in an airtight container.

Serving Suggestion: serve cracker spread inside a hollowed out bread bowl or hollowed out bell pepper.

You can also change this recipe up a bit by trading out the green bell peppers for mild green chili peppers for a bit more spice. Maybe even try it warmed a bit too.

For your next holiday meal or get together with friends, make this easy recipe and enjoy that wonderful pepper flavor you love so much.

We all love wings but sometimes that sugar content can really sneak up on us and steal precious calories. If you are watching your weight you want to purchase a low-calorie hot wing sauce or make your own at home with fresh ingredients. Here is a recipe that has approximately 25 calories per 1 ounce serving.

Wing Hot Sauce for Weight Loss Recipe

1 (8 ounce) bottle BBQ sauce
1/3 cup red wine vinegar
1 1/2 tablespoons ground Chipotle peppers
juice from 1 fresh lemon
juice from 1 fresh lime
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon ground black pepper

In a medium-sized mixing bowl combine together all of the above ingredients in the order that they are given in the recipe, stirring after each ingredient addition. If you like a more “milder” sauce then you can decrease the ground Chipotle peppers and if you like a “hotter” sauce then you can increase them. Once the sauce is mixed up you will need to refrigerate it for 4 hours to allow the flavors to infuse.

When you are ready to use it, brush it on your chicken wings to thoroughly coat both sides. You can then immediately place them onto a grill or into a baking dish to bake in a 350 degree F. oven until done approx. 20 minutes or so.

You don’t have to give up wings when you are on a low calorie diet. By baking or grilling the wings, you will be saving calories and by using a low calorie hot sauce for wings, you will be able to enjoy them any time.

There are plenty of people looking for ways to cut carbs and still enjoy their favorite wings and BBQ sauces. Sugar is the main culprit and when you make your own sauce, you can adjust the sugar or use a sugar substitute. We have a great recipe for a Low Carb BBQ Sauce that you can tweak to your enjoyment level.

Eating out can be an issue for those watching their carbs and when you have a craving for some hot and spicy wings, you do have some choices available. Here is a list of the carb counts for Pizza Hut’s Hot or Mild wings.

Variety of wings Pizza Hut Carries: (carbs per 2 bone-out wings)

* Buffalo Burnin’ Hot – 18 Carbs
* Buffalo Medium – 18 Carbs
* Buffalo Mild – 18 Carbs
* Spicy Asian – 24 Carbs
* Spicy BBQ – 21 Carbs
* Honey BBQ – 27 Carbs
* Lemon Pepper – 18 Carbs
* Garlic Parmesan – 11 Carbs

Crispy Bone-In Wings Range: (per 2 wings) 8 to 24 carbs
Traditional Wings Range: (per 2 wings) 1 to 16 carbs

Tip: If you are looking to save carbohydrates and calories your best choice off their hot wing menu is to go with the Traditional Style Wings.

Watching those carbs doesn’t have to be hard when you have choices. You can still enjoy your favorite wings by making your own sauce or grabbing some from Pizza Hut. Enjoy them!

With fresh peppers abounding right now it’s a great time to look at a few ideas for enjoying peppers for a delicious lunch or light dinner. Here are some great pepper sandwich ideas that you will enjoy over and over again! They are great for a quick and easy preparation and the kids will enjoy them too!

Mozzarella Cheesy Pepper Sandwich

1 slice of Mozzarella cheese
1 roasted red or green bell pepper, chopped
1-2 slices of tomato
butter and bread

This is a twist on the classic grilled cheese sandwich! Butter one side of each slice of bread and place one slice in a preheated frying pan, butter-side down. Place slice of cheese on top, then the chopped pepper, slice of tomato and then top with the remaining slice of bread with butter-side facing up. Fry sandwich on low heat until brown and then flip over and fry the other side.

Spinach Mozzarella Pepper Sandwich

This is made just like the sandwich above except you add a thin layer of fresh spinach leaves on top of your Mozzarella cheese slice and omit the slice of tomato, if you choose.

Chicken Salad Sandwich with Roasted Red Pepper

1 can of chopped chicken, drained
3-4 tablespoons salad dressing
1 teaspoon minced onion
1 roasted red pepper, finely chopped
salt and pepper to taste

In a mixing bowl combine together the can of chopped chicken, salad dressing, minced onion, chopped pepper, salt and pepper until well combined. Refrigerate chicken salad for one hour and then spoon it onto a roll and enjoy as a cold salad sandwich.

These 3 sandwich selections are great to serve along with some lovely tomato soup or sliced into small sandwiches for a great addition to a buffet style meal. However you choose to make them, you are going to come back to them time and time again for the fresh goodness of the pepper flavors.
