Bhut Jolokia Hot Sauce Recipe


  • Small pinch of dried bhut jolokia pepper
  • 4 habaneros (no stems, preferably whole)
  • 1/2 cup finely chopped onion
  • 2 Cloves of garlic, finely minced
  • 1 1/2 Tbs vegetable oil
  • 1/4 Tsp. ground cumin
  • 1/3 cup white or chili-fused vinegar
  • pinch of salt & black pepper


  1. Put all of the ingredients in a blender on high and blend until smooth.
  2. Add the sauce to a sauce pan and bring to a boil.
  3. Reduce the heat and simmer for approximately 15 minutes.

    How much Bhut Jolokia would you add to over the counter hot sauce like Lousiana to make your wings hotter? A teapsoon?

    It depends on how much hotter you want it and how much of the original hot sauce’s flavor you want to retain. If you’re just adding heat, I would chop an entire pepper (less the membrane) in to bits about twice the size of (black) pepper flakes and add it directly (to about 4 oz hot sauce).

    Granted, this time consuming and most easily done with a fillet knife, but I’m so addicted to this pepper that I think nothing of it.

    If you want to retain the flavor of the sauce more, I’d suggest cutting a pepper into eights so it’s easier to remove later (one to two weeks). If you go that way though, it’s important to shake it up regularly so the oils distribute through the sauce better.
